HARVESTING THE GRAPES - WHAT HAPPENS NEXT?

The grapes arrive at the Cossetti cantina in Castelnuovo Belbo
Grapes arrive at the cantina
Vittorio connects the pump to the press
The receiving tray is connected to the press
grapes cling to each other as we tip them into the pump collecter
Grapes are tipped out of the trailer into the receiving tray & an archemedies screw moves theminto the pump tube
testing OG (sugar content)
We take a sample of the "must" (grape juice) and test it for sugar content
Giant press makes the juice seperation easy
The compressed air press extracts all the "must" from the grapes - seperating skins immediately
transfering the must to the vat
The "must" is pumped from the press to cantina
large cement holding vat in the cantina
and into the holding tank
